Do you have very ripe bananas sitting on your counter that no one is willing to touch?  I have a way to save them from the disposal and turn them into a dreamy dessert.

I have been trying to get back to a healthier eating routine but have been struggling for those times when I need a sweet treat but want to avoid the belly bloat and the guilt afterwards. Enter… the perfect dessert to satisfy the cravings and avoid the sugar overload.

NOTE: This recipe is just a base, you can add in ingredients to amp it up – whether it be fresh fruit, nuts, and other toppings to create your desired dessert.

Prep Time:  10 mins (additional 1-2 hours to freeze bananas)
Cook time:  5 mins
Total time:  15 mins

Serves: 1-2

Ingredients

·        2 Frozen Bananas (Super Ripe!)
        * Once ripened, simply peel, cut, and store in a freezer in saran wrap/ freezer safe storage bag or container and keep in the freezer. *
·        ½ Cup Coconut Milk or Unsweetened Vanilla Almond Milk (or ¼ Cup of both)

Instructions

  • Simply combine all ingredients in Vitamix/Nutribullet/high speed blender or food process and blend until thick and creamy (it will resemble frozen the texture of soft serve yogurt).
  • Serve Solo or add extra toppings to your hearts delight.

** If you want to make this dessert even more fancy - you can use a piping bag to put the mixture through if it is thick enough or use a Dessert Bullet to create a more defined shape. **
